Executive Chef Callum Graham has created a four-course menu inspired by the season and produce from Daylesford’s market garden. Each course will be served in The Chicken Shed alongside a carefully chosen Michele Chiarlo wine, bringing together the flavours of the kitchen with the character of the region’s vineyards.
Throughout the evening, our Sommelier Yordan will be joined by Simone Colasuonno from the Michele Chiarlo estate to guide guests through the wines and share insights into the family’s approach to winemaking, their vineyards across Piedmont, and the traditions that shape each bottle.

Michele Chiarlo is one of Piedmont’s most prestigious wine producers, creating outstanding wines from some of the most exceptional sites in Piedmont, including Barolo’s world-famous Cannubi and Cerequio vineyards. Founded in 1956 by the great Michele Chiarlo and now run by his sons Alberto and Stefano, the Chiarlo philosophy “is to capture the terroir” from their sustainably cultivated vineyards, which hold the Equalitas certification. With a judicious use of oak, they hand-craft a selection of wines suitable for ageing and some which can be enjoyed earlier.
