Using produce from our market garden at Daylesford and surrounding countryside, Executive Chef Callum Graham has created a four-course menu that celebrates the season. Each dish will be paired with Mosel Rieslings from the Dr. Loosen cellars, carefully selected to complement the ingredients on the plate.
Throughout the evening, our Sommelier Yordan Rusev will be joined by Ernst Loosen to introduce the wines and discuss the unique slate-rich terroirs and traditional methods behind Mosel winemaking. Together, they will offer insight into one of Germany’s most celebrated wine estates.

Since taking over the estate in 1966, Ernst “Erni” Loosen has been at the forefront of the revival of traditional Mosel winemaking, establishing himself as one of the most influential figures in the world of wine and the driving force behind Dr. Loosen. Widely credited with helping restore the global reputation of German Riesling, he is celebrated for his passion, expertise and unwavering commitment to expressing terroir through wine.
